Spring is a pleasant yet raw season. For that reason we need cocktails that carry the same intrinsic quality of spring. Here are two drinks sure to make you believe you’re being reborn this spring.
FLYIN’ HAWAIIAN
1 1/4 oz scotch whiskey (preferably Macallan 12)
3/4 oz Sherry (Osborne)
3/4 oz Falernum
1/2 oz Lemon
1 oz Pineapple
Pour ingredients into a shaker: shake, strain, serve up into a highball glass, finish with a dash of Peychauds. Citrus star and cherry garnish. For a fruit blend that would make you think you’re at a Hawaiian beach front hotel roasting a pig.
CUBAN MOJITO
2 large limes, quartered
1/2 bunch mint leaves
Include 7 strawberries, quartered for strawberry flavor
1 cup white sugar, mix in sticks of sugar cane for garnish
1 cup white rum (preferably Havana club)
2 cups club soda
8 cups ice cubes
Place mint leaves and 1 lime wedge into a hurricane glass. Use a muddler to crush the mint and lime. Add 2 lime wedges and sugar, and muddle again. Do not strain. Add ice. Pour the rum, and fill the glass with club soda. Stir. Garnish with a lime wedge or sugar cane. For a taste that would make you believe you’re in Havana dancing salsa.
