3 Quick and Delicious Ways to Cook Eggplant

Eggplant makes the perfect meal for summertime. It’s cheap, quick to make, and can be made many different ways. You can serve it over pasta, or rice, or have it as a meal all on it’s own. No matter which way you choose to cook it, it’s guaranteed guests will be asking for seconds.

Summer Eggplant, Zucchini, Squash:
Slice the vegetables into tiny pieces. You’ll want to soak the Eggplant in water for one hour to remove the bitter taste. Put in a small aluminum tray with Salsa. Add onions, and whatever spices that you wish. Cover with aluminum foil, and steam on barbe-que for about five minutes. After five minutes, put on an oven mitt, and shake the tray to rotate. Leave on barbe-que another five minutes. Enjoy!

Sauteed Eggplant:
Slice eggplant into tiny pieces, and soak for an hour to get bitterness out. Place in a pot with carrots, peppers, onion, and pasta sauce. Add whichever spices you wish. You can add red pepper and hot sauce if you want a spicier meal. Once it comes to a boil, simmer on medium- low, and let steam for 15 minutes. Add Pasta, or Brown rice, or enjoy as a meal.

Baked Eggplant:
Slice into 1- 1 1/2 inch cuts. Line bottom of lasagna tray with sauce, then layer with Eggplant. Cover first layer of Eggplant in sauce, and add cheese if you wish. Keep repeating layers until you have filled the tray. Bake for an hour at 350
