Frozen Fruit Pops

Servings: 4 fruit pops

Ingredients:

– 1/3 cup diced kiwi

– 1/3 cup diced watermelon

– 1/3 cup diced strawberries

– 1/3 cup diced pineapple

– 1/4 cup fresh pineapple juice or orange juice.

Combine the diced fruit in a bowl and fill each 5-ounce cup with fruit. Add 1 tablespoon of juice and insert popsicle sticks into each cup. Freeze until firm.

Spicy Watermelon Popsicles

Servings: 10 popsicles

Ingredients:

– 3 cups seedless watermelon

– 2 tomatoes

– 3 jalapeno peppers

Halve the watermelon and then cut it into 1-inch slices. Remove the rind and cut the watermelon into 1-inch cubes. Peel the tomatoes and puree with the watermelon. Pour the pureed mixture through a strainer to remove large chunks. Slice the jalapeno peppers thinly. Add the peppers to the watermelon-tomato puree and let this mixture sit in the refrigerator for an hour. Divide the juice among popsicle molds and freeze until firm.

Power Layered Popsicles

Servings: 10 popsicles

You will need ½ cup for each layer, with six layers per popsicle.

Ingredient suggestions:

– yogurt

– coconut water

– coconut milk

– tomato juice

– spinach, kale, or wheat grass juice

– mashed banana

– any berry juice or puree

– pomegranate juice

– chia seeds

– wheat germ

– flax seeds

Use a small glass measuring cup with a spout to pour the layers into your popsicle mold. Begin with the first layer and evenly pour a small amount into each mold. Freeze until firm. Lay down the second layer and this time, cover the top of the mold with foil and insert the popsicle sticks right through the foil. Freeze until firm and continue layering until you fill the mold.

Green Smoothie Detox Pops

Ingredients:

– 1 apple, cored and cut into chunks

– 2 cups green grapes

– juice of 1 lemon

– 2 tablespoons honey or agave

– 2 cups chopped kale

– 1 cup cubed zucchini

– ¼ to ½ cup water

– 1 avocado, peeled and de-stoned

Put all the ingredients, except the avocado, in a blender and blend until smooth. Place a mesh strainer over a medium bowl and pour the contents of the blender into the strainer. Use a rubber spatula to push the mixture through. Throw away the pulp and rinse the blender. Pour the liquid back into the blender and add the avocado. Blend until smooth. Divide the mixture among the molds and freeze for 4-6 hours until firm. After 1 hour, stick a popsicle stick into each mold.

Coconut Fig Popsicles

Ingredients:

– 1 cup coconut milk

– 3 tablespoons maple syrup

– 1/2 tablespoon pure vanilla extract

– 5 ripe figs

Whisk together the coconut milk, maple syrup and vanilla extract. Peel the figs and use your fingers to crumble them into the coconut mixture. Whisk all the ingredients together. Pour the mixture into the popsicle molds, insert the popsicle sticks and freeze overnight.
