Easter will be here before you know it! If you like baking but don’t want to bring the same thing you brought last year, here’s a fun and delicious treat to bring to your Easter celebration party.
What you will need for the cupcakes:
1 1/3 cups of flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1 teaspoon of ground cinnamon
1/2 cup of chopped walnuts
2 eggs
2/3 cup of white sugar
1/2 teaspoon of vanilla extract
2/3 cup of vegetable or canola oil
2/3 cup of unsweetened applesauce
1 1/3 cups of grated raw carrots
What you’ll need for frosting:
1/4 cup of butter
4 ounces of cream cheese
2 1/4 cups of confectioner sugar
1/2 teaspoon of vanilla extract
Preheat your oven at 350º F, and line your cupcake pans with paper liners. In one bowl, mix together the flour, baking soda, salt, and cinnamon. Fold in the chopped walnuts. In a separate bowl, whisk the eggs until they are lightly beaten, and then carefully add the sugar, oil and vanilla extract to this mixture until it is slightly thick. Then, fold in the applesauce and carrots.
Finally, fold the entire egg mixture into the bowl of flour mixture, and once it is thoroughly mixed, slowly pour the mixture into the cupcake pockets. Bake for 20-25 minutes, or until a toothpick can be placed inside the cake and removed cleanly.
While the cupcakes bake, mix together the butter, cream cheese, confectioner sugar and vanilla extract. This mixture must be very thick. After the cupcakes are cooked and cooled, lightly spread the frosting, and decorate as desired. Try finishing with some peeps or egg candies for the perfect touch of Easter!
