Spaghetti alla Carbonara is a more authentic Italian dish than your typical spaghetti and meatballs, and it’s so easy to make. This is a meal that you would typically pay about $15 or more at a luxury Italian restaurant, when you can make it at home with things that are already in your kitchen. Carbonara consists of only a few key ingredients, eggs, bacon, and cheese. This indulgent pasta dish takes about 10 to 15 minutes to make. Carbonara is certainly not an “eat this everyday” recipe, but definitely a recipe for special occasions or if you’re looking to impress your significant other. It is a recipe with flavors that anyone would love. Some things you’ll need for this Italian dish are:

• 1 pound of Spaghetti
• 1 tablespoon of Sea Salt
• 8 ounces of Bacon or Pancetta
• 4 whole large eggs (farm fresh preferred)
• ½ cup of freshly grated Parmesan Cheese
• ½ cup of freshly grated Romano Cheese
• Black Pepper

Bring a pot of water to a boil. Place your eggs in a bowl of warm water to bring the eggs up to room temperature.
Cube up the bacon. Add the bacon to a large skillet and cook over medium heat until crispy. Drain the bacon on a paper towel lined plate.
Add the tablespoon of Sea Salt to the boiling water and add in spaghetti. Cook according to package directions, about 9-10 minutes.
Meanwhile crack the eggs into a large serving bowl and whisk well. Add the grated cheeses and black pepper and stir.
Once the pasta is cooked, drain the pasta reserving 1 cup of pasta water in case you need to revive the sauce. Add the drained hot pasta to the bowl. Toss thoroughly and vigorously to cook the eggs and melt the cheese. Add reserved pasta water if necessary.
Add in the bacon, toss some more, and serve with more black pepper if necessary. Bon appetit!
